How is the GPPK produced?

The production process of GPPK requires careful harvesting and processing. Pistachios are harvested before full maturity when the chlorophyll level inside the kernel is still very high. When the pistachios are raw in-shell, we call them “KALAK”. Then we crack the KALAKs with the cracking machines. The kernels are then separated from the shell and dipped in hot water to soften the thin skin layer. After peeling, the kernels are dried to reach a specific moisture content; if they are over-dried, they become brittle, and clients are not interested in them.
After that, the color sorter will sort the kernels, and automated machines will remove defective pieces and foreign materials; they will then be checked again by laborers for any possible color-sorting errors.
